Like I said, caprese is the first thing that comes to mind when I think of tomato season! There are so many ways to make a caprese sandwich, and this is one of our favorite healthier versions using multigrain bread and grilled chicken for added protein. We like to toast the bread and warm the ingredients so it’s almost like a panini.
Prosciutto Mozzarella Sandwich

During the warmer months in college, we used to go to Bricco Salumeria in Boston’s North End to grab sandwiches for a picnic lunch. This recipe is a nod to our favorite Bricco sandwich, a classic caprese with layers of salty prosciutto. Fresh, juicy tomato really shines here against slabs of mozzarella and fresh basil.
Caprese Panini with Pesto

Panini nights were always a fun summer dinner in both of our houses growing up! We’d grab fresh tomatoes from the farmer’s market and snip some basil from the herb garden, then DIY our sandwiches with classic ingredients like pesto and fresh mozzarella.
