Slice the avocado in half, remove the pit, and scoop the flesh into a blender. Add the greek yogurt, about half the lime juice, and salt. Optionally, add chopped cilantro.
Blend on medium speed until smooth, about 1 minute. Taste and add more lime juice or salt if necessary.
Transfer crema to a small bowl or jar. Use immediately or cover and store in the refrigerator for up to 5 days.

Lime juice: You can play around with the amount of lime juice in this crema to find your preferred balance of flavor and texture. Start with a little lime juice, then taste test as you go and add a little more at a time to achieve the desired consistency.Greek yogurt: We like using 5% fat Fage as the texture is almost identical to sour cream. You can of course you sour cream instead if desired.Serving suggestions: This recipe makes a good amount of crema and there are plenty of ways to use it! Try it on carne asada tacos, grilled chicken, or in a burrito bowl.Refrigerating: If you're making this crema for a recipe like our avocado chicken, you can prepare it ahead of time and keep it in the refrigerator until ready to use.Cilantro: Some people don't like cilantro, so it's an optional add in. If you love cilantro and want a little extra fresh and herby flavor, add it in!
