While the brie is cold, cut away the rind. Then, slice the brie into chunks that will fit into your food processor and let it soften to room temp.
Next, combine the brie, lemon juice, and ½ teaspoon of blueberry preserves in a food processor.
Whip the brie until it's smooth and creamy, and no chunks remain.
Transfer to a serving dish and top with blueberry preserves, lemon slices, and lemon zest. Serve with pita crackers, crostini, or fresh fruit.

Removing the rind: You can easily remove the rind from a wheel of brie by gently scraping it off with a paring knife - no slicing required and no wasted cheese!
