First, Prepare the bruschetta topping. Add roma tomato, yellow onion, minced garlic, olive oil, and sea salt to a medium bowl, then stir until well-combined. Set aside.
Cooking & Assembly
Preheat the oven to 170 degrees. Place the brioche buns cut-side up on a baking sheet and toast for 10 minutes, or until lightly golden brown.
In the meantime, cook the burgers. Preheat a cast iron grill pan over medium-high heat for about 5 minutes. Transfer patties to the pan and cook for 4 to 5 minutes. Flip, then cook for another 2 to 3 minutes.
Once the brioche buns are toasted, remove from the oven and transfer to plates. Lightly drizzle olive oil and balsamic vinegar on the inside of the top buns.
Check patties for doneness, then remove from heat and transfer to brioche buns.
Spread about 2 tablespoons garlic and herb cheese on each burger, then top with a spoonful or two of the bruschetta topping.
Serve with your favorite sides, a cold beer, and enjoy!

Garlic & herb cheese:Alouette spreadable cheese is one of our favorite things to snack on, so it was an obvious choice for this burger! If you can't find it at the store, we recommend using a similar spreadable cheese like boursin. The important thing here is to use a garlic & herb cheese for some Italian flavor.Cooking the burgers: We use a cast iron grill pan to cook burgers on our stove.
