These healthy grilled chicken sliders topped with lettuce, tomato, onion, and chipotle mayo are an easy lunch, dinner, or party appetizer you can cook indoors on a cast iron grill pan.
First, marinate the chicken. Add chicken to a bowl with lemon juice, olive oil, and salt and stir to combine. Marinate at room temperature for 15 to 20 minutes.
In the meantime, prepare the slider toppings. First, slice the tomato into quarter-inch thick rounds, then cut each round into quarters. Next, slice the onion into thin rings. Finally, gently tear the green leaf lettuce into 12 pieces, one for each slider.
Next, grill the chicken. Preheat a cast iron grill pan over medium-high heat, then add the chicken once the pan is hot. Grill for about 9 to 12 minutes total, flipping every 3 minutes or so, until cooked through.
Finally, assemble the sliders. Separate the dinner rolls and slice in half, then transfer the grilled chicken patties to the bottom halves of the rolls. Top each slider with a piece of lettuce, a quarter of tomato, and a few slices of onion. Then, spread about 1 teaspoon of chipotle mayo on the top half of each slider bun before closing.
Serve immediately with a side of fries, chips and salsa, or a side salad and enjoy!

Brioche dinner rolls: We like to use Nature's Own brioche style butter rolls for this recipe, but you can definitely use any type of pull-apart dinner rolls or Hawaiian rolls.Chipotle mayo: We recommend trying our homemade chipotle mayo recipe here for these sliders - it's so easy to make and tastes delicious with the lettuce, tomato, and onion! Alternatively, you can use your favorite store-bought chipotle mayo, regular mayo, or even garlic aioli on these sliders. Mix and match your favorite condiments for some variety.Grilling the chicken: You can absolutely follow your preferred method for grilling chicken, whether that's on a real grill, a George Foreman, or a cast iron grill pan.
