These loaded beef nachos are piled high with ground beef, nacho cheese sauce, refried beans, onion, tomato, avocado, and sour cream. Make them for a savory game day snack!
Brown the ground beef in a frying pan over medium-high heat, stirring occasionally, about 7 to 8 minutes. Carefully drain excess grease, then sprinkle in the taco seasoning. Add the water and stir to combine. Bring to a boil, then simmer for about 3 to 4 minutes until the sauce has thickened.Remove from heat and set aside.
Nacho Cheese Sauce
Add the Velveeta and heavy cream to a small saucepan and melt over medium heat, stirring frequently, about 5 minutes. Season with salt to taste, then set aside.
Nachos
Preheat the oven to 350 degrees F.
Spread the tortilla chips out in a single layer on a small baking sheet, overlapping them slightly. Drizzle the cheese sauce over the chips. Dollop the refried beans evenly over the chips, then top with the seasoned ground beef.
Bake for 8 to 10 minutes, just until the beans are warm and the cheese is extra gooey and melty.In the meantime, mash the avocado and season with lime juice and salt. Set aside.
Once the nachos are warm, top evenly with onion and tomato. Dollop on the mashed avocado and sour cream. Optionally garnish with chives and serve hot.
