First, prepare a rocks glass with a Tajin rim:Add the Tajin to a shallow plate or flat dish, shaping it into a pile that has a diameter larger than that of the glass.Then, cut a slit into the middle of a lime wedge, perpendicular to the length of the wedge, and position the lime wedge on the rim of the glass, using the slit as a guide. Run the lime wedge around the glass a few times, making sure the rim gets fully coated in lime juice.Now, set the lime wedge aside and place the rim of the glass into the tajin - the lime juice will help it stick to the glass. You can roll the glass slightly to make sure you have an even and generous coating.Finally, set the glass aside and fill it with large ice cubes.
Next, fill a cocktail shaker with large ice cubes. Add the mezcal, lime juice, triple sec, and agave nectar, and close the shaker tightly. Shake until the shaker is cold and frosty, about 10 to 15 seconds.
Strain the cocktail into the prepared glass and garnish with sliced jalapenos and a lime wheel. Enjoy cold!

Tajin rim: The Tajin rim gives this mezcal margarita its spicy kick, so don't skip this! It's worth the effort, trust us - and it's a great time to practice feeling like a real bartender :) Note that you need enough Tajin on the plate for it to pile up around the edge of the glass, so you will have some unused Tajin leftover on the plate afterwards. Save it for more cocktails later on, or sprinkle it over your tacos!Mezcal: Espadin mezcal is the best kind to use for a margarita, since it's generally more affordable than other kinds - and since you're mixing it into a flavorful cocktail, you don't need it to be top notch quality.
