Remove the rind from the brie and slice it into cubes. Let it sit at room temperature for about 30 minutes to soften.
Once the brie has softened, add it to a food processor with the extra virgin olive oil and chopped Calabrian chiles in oil. Pulse until the brie is smooth and creamy.
Transfer the whipped brie to a serving dish. Make a shallow well in the center using the back of a spoon, and fill the well with additional chopped Calabrian chiles. Drizzle extra oil over the whipped brie from the jar of Calabrian chiles if desired, then serve with sea salt crackers.

You don’t need the fanciest brie for this recipe, since you’re going to be flavoring it. We recommend buying a mid-tier brie so that it has a smooth, creamy texture for whipping and a clean flavor profile to build upon.
Make sure to use a high quality oil that you enjoy the flavor of. Olive oil varies widely in flavor and quality, and lower quality options can taste bitter (which you definitely don’t want).
Calabrian chiles are often sold in jars, either whole or chopped. If you can only find the whole ones, simply take out all the peppers (leave the oil in the jar), chop them up, and return them to the jar! Then you have chopped Calabrian chiles ready to go for this recipe and any others.
